"I come from Tehri Garhwal, India, where I worked in kitchens for five years, then spent another five years cooking in the Middle East before making Canada my home in 2012." That's Deepak Bhatt, chef and owner of Aldergrove Indian Bistro, writing on the restaurant's blog this October.

His rule is short. "We don't do modern twists," he writes. The kitchen's job is to "cook real Indian flavours and serve honest, generous portions."

Third time lucky on Fraser Highway

The bistro opened in early 2019. A local food blogger who reviewed it that March noted it was the third restaurant in the space in about five years. They found the owners "enthusiastic and optimistic" and gave it four out of five.

Since then it's built a 4.8-star Google average across nearly 1,600 reviews. That's a lot of happy diners for one stretch of Aldergrove.

"The community really showed up"

Bhatt doesn't take that support for granted. "When people choose to eat here, they're helping us keep our staff working and our doors open," he told the Aldergrove Star last November. "During tough times, the community really showed up for us, and that's something I'll never forget."

Some fans ordered in plenty of times before they ever sat down. One longtime delivery customer finally tried dining in and wrote, "It definitely was a right choice."

Butter chicken first, then the cashew curry

Butter chicken is the obvious first order. One reviewer also recommended the cashew black pepper curry, called the place "One of the better Indian restaurants in this area," and pointed out "a ton of gluten-free options."

Feeding a crowd

The catering side gets real use. One customer who ordered for an event praised the "on time delivery" and wrote, "All my guests loved the food and asked where is it from." The restaurant offers live catering around the Fraser Valley, from Langley out to Chilliwack, its website says.

Servers get noticed too. Two separate reviewers thanked the same server for "lovely service."

Late kitchen, big feasts

It keeps late hours: 11:30 a.m. to 10:30 p.m. Sunday to Thursday, and until 11 p.m. on Fridays and Saturdays. Last holiday season it offered family feasts for groups of four to 12, the Star reported. Planning a party? Call (604) 381-3332 and ask what's on this year.
